Pérès founded the Ensemble Organum in 1982, which is a group dedicated to the performance and study of medieval music. Under his direction, Ensemble Organum has gained international recognition for its rigorous approach to historical authenticity, often exploring the earliest forms of Western plainchant and polyphony.
